Oven Temperature Not Accurate — Sensor, Element, or Control Issue
If your oven temperature is not accurate in West Hollywood — food burns on the outside but is raw inside, the cake browns too dark, or the chicken takes twice as long as the recipe says — the most common causes are a failed temperature sensor, a weak heating element, a control board issue, or a worn door gasket. I test the actual oven temperature first, then check the part that is off.
The problem
The oven turns on. It heats up. The display shows the temperature you set. But the food does not cook the way it should. There are a few common patterns:
- Oven runs hot — food burns on the outside, cookies brown in 6 minutes instead of 12, edges burn before centers cook.
- Oven runs cold — food takes much longer to cook than recipes say, baked goods stay pale, chicken comes out undercooked.
- Oven runs uneven — front cooks faster than the back, or top rack cooks much faster than bottom (or vice versa).
- Oven runs wild — temperature swings up and down a lot during one bake.

Possible causes
- Failed temperature sensor — the most common cause. The sensor (a small probe on the back wall of the oven) reads the actual temperature and tells the control to add more heat or stop. When it fails or drifts, the oven runs hot or cold by 25 to 75 degrees.
- Weak bake or broil element — an electric element that is partly burned out heats more slowly than it should. The oven thinks it is at 350 but the air inside is still 280.
- Weak gas igniter — on a gas oven, an igniter that is weak takes longer to open the gas valve. The oven cycles less efficiently and temperature drops between cycles.
- Worn door gasket — the rubber seal around the door loses heat. The oven runs and runs but cannot hold temperature. Common on older ovens.
- Control board out of calibration — less common, but possible. Many ovens have a calibration adjustment in the control menu.
- Convection fan failure — if you have a convection oven and the fan stops, food cooks unevenly even at the correct temperature.
- Oven thermometer placement — sometimes the oven is fine but where you measure temperature inside is hotter or cooler than where you set the rack.
What you can safely check before calling
- Buy a small oven thermometer ($5 at any kitchen store). Set the oven to 350 and let it preheat for 20 minutes. Read the thermometer in the middle of the oven. If it reads 325 or 375, your oven is off and we need to fix it. If it reads 350, the issue may be the rack position, the pan, or the recipe.
- Check the door gasket. Run your hand around it. Soft and continuous = good. Cracked, hardened, or torn = bad.
- Look at the bake element (electric ovens). A clear bright glow when it cycles is normal. A dull or partial glow means a weak element.
- Note any error codes or strange behavior. Take a photo of the model number on the door frame.
How I check it
- I confirm the symptom with the client and ask whether the problem started suddenly or built up over time.
- I run a temperature test with a calibrated probe to confirm how far off the oven is.
- I test the temperature sensor with a meter. A sensor that reads out of range needs replacement.
- I check the bake and broil elements, the igniter (gas), the control board calibration, and the door gasket.

- After the repair, I run another temperature test to confirm the oven hits and holds the set temperature.
